What's the best way to document a restoration for insurance purposes?

I've been into Classic Cars for about 3 months now and wanted to share my thoughts.

It exceeded my expectations in every way

I think the biggest misconception is that you need to be an expert to enjoy this. Just start with Mustang and go from there.
