Best resource for learning about Coppola?

The practical effects vs CGI debate has been going on since the mid-90s and I think we've reached a point where the question itself is outdated.

Mad Max: Fury Road used an enormous amount of CGI — what it didn't use was CGI as a substitute for physical scale. When something happens in that film you believe it because you're watching physics, not rendering. The CGI they used was to enhance and clean up real stunts, not to replace them.

The problem isn't CGI. The problem is CGI used to create things that have no physical reference point, combined with turnaround times that don't allow for the iterative refinement that makes CGI look real.

When a compositor has three months to integrate a rendered element into a plate shot, it looks real. When they have three weeks, you can see the seams. Studios have been choosing the three-week option for fifteen years.
